i like a fritatta.
it has to at least have mushrooms and cheese, and can have peppers and onions, or broccoli, or elephant garlic, or tomatos.
if you use many veggies, precook them a bit so they don't weep (i use the "fresh vegetable" setting on the microwave)
a little shredded cheese on top after cooking will melt temptingly over all.

here's a tip for scrambled eggs: use the right size pan.
too big for the number of eggs, and they scorch.
too small, and they cook enevnly from being all piled up.
