Is what I am making tonight for dinner!
It's really simple, and really tasty!
Toss chicken of your choice (I like thighs for the dark meat) in with diced potatoes (big chunks or small). Add onions and mushrooms if that's your thing. Then sprinkle with some spices like Garlic Salt and Pepper. Then mix it all together with a big jar of salsa (I like fruity salsas over spicy salsas).
Bake it in the oven at 400°F for an hour+ with foil loosely over the top so it stays moist, then another fifteen minutes or so without the foil to brown.
Make sure the chicken is cooked and the potatoes are tender (easily stick a fork in them) before serving. If not, just cook a bit longer. smile
